Bloody Good Burgers



Ok, so you can probably get a decent burger from many pubs, delis, and even some fast food joints, but really why bother. They can be made way better at home. And now here I will give you some great ideas and tips so next time you have friends over you don't have to do a Maccas Run.

First of all the meat. Now, if you have a food processor I suggest buying chuck steak whole and taking it home and running it through the food processor. The results are wicked. But for those of you who don't buy mince meat from a butcher. Supermarket mince meat is vacuum packed which actually destroys the collagen that is left in the meat. It is this collagen that holds the meat together, so unless you planning on using a load of flavour blockers in order to bind the burger don't do that.

Now, for a realy good basic burger season the meat and shape it into patties. Done!!!! How easy is that.

To cook this easiest of burgers gril over a medium grill for abou 5-8 minutes a side depending on the thickness. If you minced your own meat you can cook to about medium and leave a little colour in the middle. If you bought mince you will need to cook it through.

Serve withe sauce (combine 1 part ketchup with two parts american mustard and you have McDonalds special sauce), bit of salad, maybe a slice of bacon, and some raw white onion, and a slice of cheese. Best burger ever.

If you wanna mix things up you can also use lamb mince instead of beef. Venison works well to.

Now, just to show I can be kind. If you do have supermarket mince you can still amke a good burger. So here is a recipe that I borrowed from another source but I ahve made and i works well with some modifications I made myself.

Ingredients.
750g Minceed Beef
2 garlic cloves, crushed
1 small onion, finely chopped
2 tablespoons double cream
1 tablespoon chopped fresh parsley
salt and freshly ground balck pepper

Method
In a heavy skillet lightly fry the onions and garlic until translucent. Throw these in a bowl and allow to cool

Combine the meat with the onions, then the cream, parsley, and salt and pepper. Be generous with the salt and pepper.

Shape into patties, and grill for about 5-8 minutes per side over medium heat depending on thickness. Make sure to cook through. When pressed in the middle they should feel firm and have little to no give.

Following the recipe



"I don't need to follow a recipe, I am great."

How often have you said that or something similar. I know I went by that addage for many years.

While mostly we get good results by just using the recipe as a guide often we miss out on the true flavours of what we are cooking.

Remember, when these recipes are written they go through rigorous testing in a test kitchen. Well, the ones in cookbooks and most cooking magazines do, the ones on line often don't.

It's important that when you do first cook something try your best to follow the recipe to the letter. That way you get an idea for what it should taste like so next time you can play a little.

Sometimes it can be hard though. Some ingredients you just can't find. I have looked all over Adelaide for a good variety of fresh chillis and that aint happening. So do you completely skip that recipe.

This is where you might have to bite the bullet and start substituting. Try your hardest to follow the recipe I said.

But substituting is dangerous if you have no idea what something should taste like.

Mexican food is my speciality, I love it, and I know it pretty well. I'm not a professional chef, but I do know enough to be confidant with substitutions.

For example, and you may have noticed this in my recipes. Mexican Oregano can be tricky to come by. Fortunately here in Adelaide we have a few places you can pick it up.

The thing is, while it is called Oregano it is not the same beast as the much sweeter Mediteranean Oregano. The closest mainstream herb I have found is Marjoram, it has a very smilar taste and won't change your dish.

Chillis are the other issue. Those long thin things you see in the supermarket or pepper tasting hybrids. Great for stirfries or the like but not great substitutes if a recipes calls for a particular chilli.

Do I bite the bullet and say no Mexican cooking any more. Oh lord no. I've found Polanos can be replaced reasonably well with banana caps or small green peppers. The taste is different, but not that far from the original.

Some of the other chilli varieties. You may need to get on line and get the seeds and grow yourself. Hard work but most rewarding.

Don't mess about too much



I love Chilli Con Carne. The recipe I use is one I got from a cookbook granted but it's the love and care I put in that makes it great, right :-)

So anyway, I've always made it using New Mex Chillis or a combination of New Mex and Ancho. Well I decided to experiment a little bit the other day and combined New Mex and Passilla.

I also used a little more dried chilli than I usually do, wanting a little more heat.

Well... the result was a firebreather and a half. While it was great to my taste my sister and my dad said woohoo too hot. The Passilla's may be used for something else next time.

Now, making chilli con carne. To be honest a good chilli for me should be made with chunks of chuck steak cooked slowly with beef broth, a cup of pure mild chilli powder (or a combination of mild chillis), a little mexican oregano or marjoram, a sprinkling of chilli flakes and some cumin.

That's really it. I know you get some people who go on about adding beans and tomatoes. In truth I'm not gonna sit here and tell you what is traditional and what isn't The fact is you should play a little.

Just be careful of the chillis you use ;-)

Essential Skills. (the Onion)



Ok, so I been pretty much going at recipes only so far and I'm sure you're all wondering where the excitement in food is. Well, let me start.

Onions are perhaps the most brilliant ingredient and the base of so many foods.

Have you ever smelt the aroma of garlic and onions slowly browning in a little oil. It's the building block of many a good meal. It's what we often associate with cooking, that smell.

But actually browning onions and garlic is something so many people get wrong. The results of this step are the difference between mediocre food and wow!!!!

To start with pre heat your pan. Your pan should be non-stick as most pans are now. You wanna heat it over medium to medium high. WARNING!!!! Remember different burner sizes will give off more heat. It may sound like a dumb point, but is one people often neglect. Even when following a recipe from a book they think all ovens and stove tops are the same. They aint.

Once the pan has had a while to get warm add a little oil, not too much but enough to evenly coat the base of the pan thinly. If the pan is too cold this will seem slow, let the pan heat a little more.

Add the garlic and the onions and continue to stir and observe. If any start to burn discard. Pan is too hot. Brown or copper is good. Black is screwed. You need to start over if you get any black. Remember you are browning.

If doing just a small amount of onion say 1/2 to one small onion this process should take about 5-7 minutes. The onions should be a lovely golden brown. Now you are ready to start adding your other ingredients.

If doing a large amount of onions, say you are making a curry, there is the recipe book way to do it and the way I was taught. The way I was taught takes a little longer, but is worth the wait.

Use a reasonable amount of oil in the bottom a saucepan and add all your onions over a low-medium heat. Then throw the lid on the pan. Keep an eye on them and stir every so often. It may take about 20 minutes to evenly brown but when you smell the results you will be amazed. This is also a good process for making onion marmalade or if you wanna do onions for a BBQ just chuck the pan over a warmish part of the BBQ or a side burner and let them simmer while you cook the rest.

Chipotle Shrimp



Spicy time. You may have to put in a little effort for the ingredients on this one, apologies in advance.

Mexican food to me has the worst reputation of all foods. People have labelled it as fatty and unhealthy thanks to the popularity of tacos and burritos. These foods are normally served with greasy minced beef in a crisp as all buggery taco shell that explodes as soon as you bite into it. Meh!!!!!

These are what Mexican food really is. Hot, and yet so damn tasty.

Search out some canned chipotles. You can buy these online and here in Adelaide I know a few places sell them They are Chipotles en adobo, which is what you want. The Adobo itself is important.

You'll need
1 lb (450 - 500g) large prawns or shrimp,
3 TBS olive oil,
5 large garlic cloves
1 cup canned toamtoe sauce, or a lighter tasting simple one (rosella is good)
2-3 chipotles in adobo, with a little of the sauce
a pinch of MEXICAN Oregano or 2 TBS Marjoram
1/2 cup Coca Cola (or, if you don't like that thought dry white wine or Pepsi)

Clean and butterfly the prawns/shrimp, leaving the tail attached. Sprinkle with salt and pepper.

Heat the oil in a heavy skillet and saute the garlic over medium heat until golden. Put in a food processor or blender. In the same skillet cook the prawns/shrimp until just turning pink, the meat should be white. Remove and set aside. Put the tomatoe sauce, 1-2 of the chipotles, the oregano or marjoram, and process briefly. Taste and if you need more fire go for it. Pour the mix into the skillet and simmer for 4-5 minutes. Add the Coke, wine, or pepsi and taste for seasoning. When happy with seasoning add the shrimp back and cook for a minute.

Serve with napkins, and enjoy.

Quick and Easy Egg Rolls



Heat a medium non-stick frying pan over hogh heat.

For each roll whisk together one egg with sea salt and cracked pepper.

Pour egg mixture into pan and swirl to coat the entire surface. of the pan.

Cook for a minute or until it is just set
.
Remove from the pan and fill with the filling of your choice, such as smoked salmon, sour cream and watercress, or roasted tomatoes, baby spinach leaves, and crispy bacon. Roll up to keep warm and serve.

Fishies



I do love fish. But in all honesty I think so many people are put off by the tinned crap you get on the shelves. That fishy smelling stuff that is enough to frighten the cat off.

In all truth the first thing you need to know about fish and eating fish is that smell that puts you of aint right. To put it in a way that will sound strange, "If it smells fishy, it aint good."

Good quality fish should smell mildly of the sea, that fresh salty smell you get at a god beach. If buying whole fish the eyes should not be cloudy and the gills a nice healthy red colour. If in doubt ask your fishmonger, a reputable one.

My favourite fish is Tuna. Good quality fresh tuna sliced thinly and served with Japanese soy sauce is heaven. Tuna is one of the few fish that can be eaten raw without being pre frozen. Any other fish you are serving for sahimi should be frozen first and defrosted slowly in the fridge.

For the less adventurous, and there are many people who don't like raw fish squid is a popular favourite as well. And here is my recipe. (quick note, this recipe calls for deep frying. While many will scoff and call this unhealthy that is a falicy. As long as the oil is hot enough it will not permeate the food it will quickly seal it. Deep fried shouldn't be eaten every day, but in all honesty no one type of food should)

Squid with Crispy Herbs and Leek

Ingredients
Vegetable oil, for deep frying
1 leek, cut into long thin strips
1/4 cup mint leaves
1/4 cup basil leaves
1/2 cup rice flour
2 teaspoons chinese five spice powder
1/2 teaspoon sea salt
8 small cleaned squid hoods, cut into strips
green salad and aioli or something similar to serve

Heat the oil in a deep fryer or a deep sauce pan to a medium-high heat. Approx 180 C.

Fry leek, mint, and basil in batches for between 15-20 seconds, or until crispy. Place on kitchen paper to drain.

Combine flour, five spice, and salt in a large bowl, add squid and toss to coat, but do not over do it, the squid should be evenly coated. Shake off excess flour and deep fry in batches for 1-2 minutes or until cooked through and crispy. Drain on absorbant paper.

Divide salad between between serving plates, top with squid, leek, mint and basil, and serve with aioli or similar dipping sauce.

As you may have noticed my little blog has been identified as possible Spam. So I decided to lok through my recipe achives to see if I could find any good recipes that contain Spam. I couldn't, that stuff sucks.

Another Quick and Simple One



Szechuan Beef with ginger-soy beans

Heat a medium non stick pan over high heat. Add 1 TBSP of szechuan peppercorns and 1 TSP sea salt to the pan and cook till frgrant (about 2-3 minutes). Place the mix in a mortar and pestle and grind it up until fine.

Sprinkle the mixture of a 400g Beef fillet making sure to give an even covering on all sides. Put a little oil in the pan then throw in the beef, cooking for 3-4 minutes each side or until cooked to your liking (this time creates a pretty rare bit of beef). Remove beef and and place on a warm plate, cover the beef to keep it warm

Put 2 TSP sesame oil in the pan and toss in 1 TBSP of grated ginger. Cook for about a minute then add 350g Bok Choy. Cook for about a minute then add 2 TBSP soy sauce, 2 TBSP Oyster Sauce, 1 TBSP sugar, and 1 TBSP Water. Cook for 2-3 minutes or until Bok Choy is tender.

Place Bok Choy on a plate and cover with some of the thinly sliced beef.

SERVES 2

Time



Time. People rush about making excuses for not cooking a health nutritious meal. Even if you are only cooking for one (like me sometimes) you can cook a healthy, tasty meal.

Save the big projects for when you have a whole day, Roasts etc do require a bit of time investment. But weeknights, allow me to give you some ideas.

Pork Chops with a tasty ass coleslaw

4 Pork Loin chops

Cover these liberally with salt and balck pepper, and a little sprinkle of chilli flakes. Cook on a grill plate or in a heavy based skillet for 2-3 minutes either side on high

For the Slaw:

Combine 1/2 cup thinly sliced white cabbage, 1/4 cup whole egg mayonaise, 1 grated granny smith, and a tbsp honey. Give it a good toss together and that is it.

Spicy Lamb with Hummus

Finely chop an onion and a garlic clove and throw it in a heavy based pan over medium heat, stirring for 2-3 minutes. Add a little more heat and throw in 500g of Lamb Mince, some Morrocon Spice Mix, and a couple of grinds of salt and pepper.

It should take about 5 minutes for the meat to brown up, just keep breaking it up with a wooden spoon as you go. Strain off any excess fat, then throw the mix in a bowl. Stir in 2 chopped tomatoes and 1/3 cup of chopped mint leaves. Season to Taste

Serve on a bed of rocket throw over some Hummus and serve with warmed pita bread.

Pasta



Everyone loves Pasta. Well, maybe some diet concious, meely mouthed people may comment that it is too many carbs or some nonsense but really the same people probably hate all food and live on protein shakes and other such nonsense.

Pasta can be light and cool perfect for Summer, or rich and hearty great in Winter. It can be complex and full of ingredients, as simple and just have a couple of ingredients. It's great at lunch, and perfect at dinner. In short, it rocks.

Now you can set out to make your own, and I encourage you to give it a go if you have a few hours to spare. Be warned, home made Pasta is more than just buying a roller. It takes practice and a good eye to get it right. But when you do is very rewarding.

Personally I aint a show off. I have made it myself but in truth a good quality dried or a deli counter fresh pasta is just as good. As far as brands go I am a brand slut when it comes to dried pasta and do prefer to buy Barilla. But really most dried pastas now are pretty good.

Trick to making good pasta is heaps of rapidly boiling salted water with a slug of olive oil Fresh Pasta will take minutes so keep an eye on it, literally 2-3 minutes she should be right. Dried, follow the pack instructions and knock off a minute. It will continue to cook even after straining from the risidual heat. If a recipe calls for ya to cool it under cold water then cook for the full pack time.

When you pasta is cooked one thing you can do is toss through some shoulder ham. Put an egg yolk on the top and then stir it through. Throw some herbs and parmesan cheese on and Carbonara.

Here's one of my favourite pasta recipes. Give it a go, it is awesome and simple.

  • 200g pancetta or a hunk of Bacon cut into fine lardons / dice
  • 2 tins of chopped tomatoes,
  • 2 medium red onions, finely chopped,
  • 2 tsp (or to taste) chilli flakes
  • 2-3 cloves of garlic, chopped (or 1.5 tsp crushed garlic from a jar)
  • 1 tbsp extra virgin olive oil
  • 1 ½ glasses of dry Italian or Italian style red wine (Chianti)
  • Sprinkle of Sea Salt
  • Freshly ground black pepper
  • 400g Buccatini or other dried pasta to serve e.g penne

  • In a heavy bottom pan, add a little extra virgin olive oil and gently heat. Add the pancetta and cook until it starts to be come crisp. Add the finely chopped onion and cook for about ten minutes on a low heat. After ten minutes add the dried chilli and garlic and cook for a further 2-3 minutes. Add the wine and allow to cook and reduce almost completely. Then add the chopped tin tomatoes. Use the best quality you can find. Cook this over a low heat for about 45minutes to an hour. Season with salt.
  • Cook the dried pasta according to instructions, until it has a slight toothy bite to it (al dente) in salted and rapidly boiling water and then drain.
  • Serve the pasta topped with the sauce and a liberal grinding of fresh black pepper, which adds a greater aroma and impacts the flavour more.
tip: If you like while the sauce is still in the pan throw some of the pasta through it, it will give you a good covering on each strand of pasta.

Starting Out



So... are you afraid

I first started cooking when I was a kid. Helping my mum in the kitchen. Weird thing was half the stuff I liked to cook I rfused to eat. I was one fussy kid living on a diet of sausage rolls (from only one place on Earth) and cheese sandwiches (only one type of cheese, only one type of butter, and white bread crusts off) That was my diet.

So when did it all change, when did I become a food lover. I now have a much broader palette, enjoy so many different foods and flavours. My first tip for the aspiring foodie, don't be afraid to try new things.

Kids are the pits, but you don't ahve to keep it totally basic. Just don't be heavy handed or give them foods you know are wrong. You won't find many kids have the palette for fois gras with black truffles.

But keeping it healthy and nutritious is the tricky part. But it is not impossible to make healthy tasting good food. Whether you are feeding an army or just cooking for one it's easy to make great food.

And forget restaurants. Yeah they have professional chefs, but really unless you are eating at Claridges and Gordon Ramsay is cooking ya dinner you can do just as good at home yourself.

That $30.00 steak and cold chip at the pub can be made just as easily at home for a fraction of the price and without the cold chips.

I like food that is simple to make, tastes good, and is reasonably good for ya. That's not to say I don't treat myself from time to time, just that a treat isn't something you have every day.
